Kanazawa Shungiku (Chrysanthemum Greens)


  • Characterized by their rounded leaves
  • Softer and less bitter than regular Shungiku
  • Usually seasoned or put in a hot pot, but can also be eaten raw in a salad.


Originally from the Mediterranean coasts, it has been cultivated in Europe for ornamental use since ancient times. Cultivation in Kanazawa is said to have started in the Edo period. Delicious when cooked in a hot pot.
